Usually the wine is mixed in a barani-ceramic container for better preservation.We also had this issue of bubbles the first time we prepared wine, and overflowing of the mix in the first 2 days after preparation. We need to maintain gap from the lid.
The wine has to be preserved after filtration into glass bottles only.No issues absolutely for a year or two also.Ensure the bottles are kept in a dark place to avoid direct sunlight or hot weather.
